The Healthier Plate: White Bean Dip

White Bean Dip

Serving Size: 2 Tablespoons

Ingredients:
1 can (15oz) white (cannelloni) beans, rinsed
8 garlic cloves, roasted

2 Tbsp olive oil
2 Tbsp lemon juice

Preparation:
In a blender or food processor, add beans, roasted garlic, olive oil, and lemon juice. Blend until smooth.
Serve with raw veggies (sweet red bell peppers, celery, carrots, sugar snap peas) or pita triangles.

How to Roast Garlic:
Cut tops of several heads of garlic, exposing the cloves. Spray garlic generously with cooking spray. Wrap in aluminum foil also sprayed with cooking spray. Heat in oven at 350F for about 30 minutes.
